Pannukakku- Finnish Oven Pancakes

These Finnish Oven Pancakes are both hearty and delicious! They taste like a mixture of Crepes and French Toast.

  • 1/4 Cup Butter
  • 4 Eggs
  • 2 Tablespoons Sugar
  • 2 Cups Milk
  • 1/4 Teaspoons Salt
  • 1 Cup Flour
  • 1 Teaspoon Vanilla (Optional)


  • Preheat your oven to 400 degrees. Take out a 9 x 13 glass baking pan and place the butter in the pan. Once your oven is preheated, place your pan in the oven and let the butter melt completely.
  • Mix eggs, sugar, milk, salt and vanilla together with a mixer or hand held mixer. Stir for 2-3 minutes or until smooth.
  • Add the flour. Stir for 2-3 minutes.
  • Pour the mixture into your 9 x 13 glass baking pan (with the melted butter in it).
  • Bake at 400 degrees for 35-40 minutes or until lightly brown.
  • Sprinkle with sugar when done. (Optional)
  • Let cool for 5 minutes and serve with syrup and enjoy!


I highly recommend using a 9 x 13 glass baking pan as opposed to a metal one. The recipe rises and cooks much nicer that way. We love to top our Pannukakku with homemade maple syrup. You might also want to try topping the recipe with jam, berries, whip cream, or cinnamon to add extra flavor.  Adding vanilla is optional and the amount wasn't specified in the original recipe. I'd recommend adding 1 Teaspoon or less if you wish.  I've tried this recipe with 2 eggs instead of 4 and I noticed the they weren't quite as fluffy. Either way, both tasted pretty good! If you are a serving a crowd, you can easily double the recipe. I would not recommend baking two pans at the same time. The recipe doesn't seem to cook or rise as well.
