Do you love Crepes, French Toast, and Pancakes? If you do, you need to try these Finnish Oven Pancakes, also known as Pannukakku. With Thanksgiving and Christmas coming up, this recipe would make the perfect food for your holiday brunch.
Pannukakku is my go-to recipe when I want to cook something easy and fast. The ingredients are pretty basic so I usually have them on hand. These Oven Pancakes make a hearty breakfast but we like to eat this for supper too! A suggest would be to serve Pannukakku along with sausage and orange juice to please your guests.

Pannukakku is a recipe that my mom made when I was a child. I remember waking up for breakfast to the aroma of delicious Finnish Oven Pancakes. My husband and I both have ancestors who came from Finland, so we share the same love for these fluffy Pancakes. This particular recipe is a family recipe passed down from my husband’s grandma.
The ingredients are pretty basic and I usually have everything I need on hand. Combine your salt, eggs, sugar, vanilla and milk together and add the flour last.
Mix your ingredients together in a mixer or with a handheld mixer.
After your oven has preheated, just add the butter to a 9 x 13 glass baking pan and let it melt completely. Watch the butter closely because it melts fast and can burn quickly.
Pull out your pan from the oven and pour in the batter. The butter and the batter will mix well together.
Once your batter is in the oven, your Pannukakku will slowly start to rise and brown along the edges.
After 35-40 minutes, your Pannukakku will be ready to serve and enjoy! Notice how the edges rise up to become nice and fluffy. You can sprinkle with tiny amount of sugar to add extra flavor.
There you have it! Pannukakku is the perfect meal to make if you don’t have a lot of time and want to cook up something delicious for breakfast. These pancakes make great meals for supper or any time of day for that matter!

Pannukakku- Finnish Oven Pancakes
Ingredients
- 1/4 Cup Butter
- 4 Eggs
- 2 Tablespoons Sugar
- 2 Cups Milk
- 1/4 Teaspoons Salt
- 1 Cup Flour
- 1 Teaspoon Vanilla (Optional)
Instructions
- Preheat your oven to 400 degrees. Take out a 9 x 13 glass baking pan and place the butter in the pan. Once your oven is preheated, place your pan in the oven and let the butter melt completely.
- Mix eggs, sugar, milk, salt and vanilla together with a mixer or hand held mixer. Stir for 2-3 minutes or until smooth.
- Add the flour. Stir for 2-3 minutes.
- Pour the mixture into your 9 x 13 glass baking pan (with the melted butter in it).
- Bake at 400 degrees for 35-40 minutes or until lightly brown.
- Sprinkle with sugar when done. (Optional)
- Let cool for 5 minutes and serve with syrup and enjoy!
We call them “puff pancakes” and my family LOVES them. I serve them with raspberry syrup and fresh berries. It’s our go to long weekend breakfast. SO fun. Although your recipe is a little different – I might have to try it out too.
